From BODEGAS CERROSOL, located in the nature on the Castilian plateau (Spain), we are increasingly aware that we have to take care of the world that surrounds us, that, unfortunately, we are destroying by leaps and bounds.

Therefore, in addition to our commitment to the environment by providing mechanisms for water purification and energy saving in our facilities, we wanted to launch an extraordinary wine based on 100% Certified Organic Viticulture:

• Doña Beatriz Ecológico 2019 (“Organic”)

From 15 hectares of Verdejo vineyard cultivated entirely under Certified Organic farming we have produced 50,000 bottles of Organic Wine transformed through 100% organic winemaking (with selected natural yeasts, without sulphites, without unnatural precipitating agents, etc.) and we have obtained a wine that is different!.

Our “Doña Beatriz Ecológico 2019” is a natural wine free of allergens and histamines.

It is a fresh and, somewhat wild wine, that we have made through a controlled fermentation with selected natural yeast at temperatures of 18-22º for 3 weeks.

We have separated the different clusters depending on the grapes that come from different soils. The wine has remained with fine lees for a controlled time. Stabilization has been carried out by natural means, as well as filtration.

TASTING NOTES

Colour
Bright, limpid straw yellow in hue with green tinges.

Aroma
Brimming with concentrated varietal and mineral aromas; its pronounced white fruits vie with attractive herbaceous elements such as laurel, thyme and fennel.

Palate
Dry, balanced and tasty. Brimming with concentrated varietal and mineral aromas; its pronounced white fruits vie with attractive herbaceous elements such as laurel, thyme and fennel.
